Emma's Nomad Kitchen I'm hosting Supper Clubs to share recipes from my travels and meet new people Hi - my name is Emma and I'm hosting supper clubs from my home in Tunbridge Wells.

I've been travelling the world to collect recipes to share with you and source my ingredients from local suppliers. The suppers will be small - around 10 people so you will get a chance to meet new people and share some great food.

Next stop is Ho Chi Minh City, Vietnam 😎😊

Here are some photos from one of the cooking classes I did. The good thing about this class was that we made lots of things from scratch, rather than using pre-made ingredients eg we squeezed our own coconut milk from freshly grated coconut which I loved! We made -

- Chicken salad with tangy Vietnamese dressing and peanuts
- Prawn and pork pancakes - with turmeric and fresh coconut milk batter, and a dipping sauce. You eat the pancakes by cutting the pancake into slice, wrapping in a salad leaf and dipping in the sauce
- Banana tapioca pudding, which more roasted peanuts on top

Hey sorry it’s been a while! Thought I’d share some photos and thoughts from my favourite meal of 2019 (maybe even ever!) in Ubud, Bali -

This restaurant is special, it focuses on creating desserts with local ingredients - think local chocolate, vanilla, coconut and coffee. I even did a chocolate making course with their chocolate supplier.

The meal started with a tour of their garden - showing us lots of local herbs, spices and fruits used in the dishes. We then ate 7 courses of savoury, tour through the kitchen, 7 courses of dessert (with cocktail pairing!) and then 7 petit fours.

One of the best dishes was their coconut tiramisu made with local chocolate and lots of different types and textures of coconut - sooooo good!

After a few weeks in Canggu, Bali, here are my fav dishes -

- Beef Cheek Rendang (again!)
- Tuna Sate (Indonesian version of satay) - familiar peanut sauce, but the sticks are lemongrass and the tuna is minced - sooo fragrant and yummy
- Sweetcorn fritters with green chilli dipping sauce
- Nasi Goreng - stir fried rice with XO sauce, fried egg, pickles and grilled fish on the side
- Jackfruit curry - really nice texture - bit like pulled meat

Next instalment of SE Asian street food....here are my favourites from Singapore 🦀🌶🍲 -

- Chilli Crab with steamed buns - whole crab pieces covered in a sweet and slightly spicy crab sauce. You have to wear an apron and plastic gloves to eat it as it’s so messy!
- Mixed Satay - beef being my favourite. The sticks were properly charred around the outside and the sauce was thick with small pieces of peanut
- Prata with chicken curry - which is like a sweet pathra (flakey naan bread) which is cooked on a very hot griddle with lots of ghee
- Beef rendang (no photo sorry!) the most mouth watering giant pieces of slow cooked beef in a thick spicy sauce - can’t wait to make this for you in the UK!

As some of you know - my husband and I have packed up our house in TW and gone travelling again. We’re off for 3 months ...

As some of you know - my husband and I have packed up our house in TW and gone travelling again. We’re off for 3 months to start with and we started in Bangkok. Here are some of my favourite street food, that I promise I will recreate at a future supper club -

- Papaya salad - with lots of chillis, fish sauce, sugar and lime
- Mango sticky rice - sweet and savoury rice, with coconut milk, condensed milk, slices of mango and crispy corn pieces
- Crab and egg curry - sweet and spicy
- Massaman curry with a thick sauce
- Tom Yum soup - with lots of seafood - amazing spicy, creamy, lime based soup - one of our fav dishes
- Crab, mixed seafood and sour glass noodle salad

First cooking class in Bangkok 🥳🥳

We went to a wet market first - which was full of live frogs, piles of spices and unusual fruits.

We then made
- Chicken mince lemongrass salad - with lots of lime, fish sauce and chilli
- Prawn Pad Thai - fried the tofu first to get it crispy and cooked the egg last in half the pan to scramble it
- Chicken Massaman Curry - lovely sauce thickened with pieces of cooked potato and not too spicy
- Ate (didn’t make) Mango sticky rice and lots of difference fruits - everyone loved mangastines
