A Portobello favourite we had to bring to Spitalfields. Our mushroom wings, served just as you know and love them - crisp, rich, messy in the best way. Placed on a bed of Aji spiced buffalo sauce and layered with pickled sweet smoked daikon and lightly fermented watermelon radish.

One of those dishes that somehow disappears very quickly.

Strawberry and vanilla, fermented of course. It can take Emre anywhere from a few weeks to a couple of months to get it just right - tasted every day until the balance of sweetness, sourness and funk hits perfectly.

Whipped English ricotta topped with a smoky-sweet Calabrian chilli salsa, smoked peppers and tomatoes, and finished with pearls of roquito pepper and dill.
