The Grand Trunk Road Odyssey arrives in Amritsar, one of Punjab’s most celebrated culinary destinations and a city renowned for its rich food culture, bustling markets and legendary roadside eateries.

Located on one of the most important stretches of the historic Grand Trunk Road, Amritsar has welcomed generations of traders, travellers and pilgrims. Its cuisine reflects the warmth and generosity for which Punjab is famous, with dishes designed to be shared and enjoyed together.

A favourite throughout the region, these Mixed Veg Pakodas bring together onion beetroot bhajia, onion spinach bhajia, moong dal-onion vada, sabudana vada and crisp potato bhaji crisps, served with coriander and tamarind chutneys. Golden, crisp and deeply satisfying, they capture the spirit of Punjab’s much-loved teatime traditions.

The Grand Trunk Road Odyssey begins at the gateway to the Indian subcontinent: the rugged North West Frontier and the legendary Khyber Pass.

For centuries, this mountain corridor connected Central Asia with the Indian subcontinent, bringing traders, travellers and culinary influences that shaped the region’s distinctive food culture. The cuisine here is hearty, bold and built around open-fire cooking, grilled meats and robust spices.

The Chapli Kebab is the signature dish of the Khyber Pass region. Minced lamb is mixed with a special blend of spices, onions, ginger, coriander stems and green chillies before being shaped by hand and cooked on a griddle. Its name comes from the Pashto word chapli, meaning slipper or “stepped on”, a reference to its distinctive flattened shape. Served on naan with vindaloo mayo, it remains one of the most celebrated dishes of the North West Frontier.

For over 2,000 years, the Grand Trunk Road connected traders, pilgrims, armies and communities across the Indian subcontinent.

Stretching from the North West Frontier to the Bay of Bengal, it carried spices, recipes and culinary traditions between some of the region’s most celebrated food cultures.
From Monday 15 June, Masala Zone invites you to follow this legendary route through a limited-edition culinary journey spanning multiple regions, cities and flavours.

Over the next three months, we’ll travel from the robust North West Frontier through Punjab, Delhi and Lucknow before arriving in Bengal and Bangladesh, discovering iconic dishes along the way.

For over 2,000 years, the Grand Trunk Road has connected cities, cultures and cuisines across the Indian subcontinent. Stretching from Lahore to Kolkata, this legendary route carried traders, pilgrims, spices, ideas and recipes, shaping the food traditions that continue to define the region today.

This summer, Masala Zone invites you to experience The Grand Trunk Road Odyssey, a 12-week culinary journey exploring the diverse flavours found along one of Asia’s oldest and most storied highways.
From the smoky grills of Lahore and the vibrant street food of Delhi, to the rich curries of Bihar and the refined flavours of Kolkata, each dish represents a stop along the route and a chapter in its remarkable story.

Expect regional specialities, historic recipes and dishes inspired by the roadside eateries, bustling markets and royal kitchens that have welcomed travellers for generations.

Traditionally made with yoghurt and fruit, it is particularly popular during the warmer months when mango season arrives.
