For brightening our walls with some fantastic, carefully selected images taken during a career capturing some of the biggest names in music.

Some of the photos and drawings are from his personal collection also, presented as scrap book pages.

Tim wanted to bring a smile to customers returning to the shop as lockdown eases, in a space that he’s familiar.

Geek alert !

It seems a lot of you have been having fun experimenting with your own cold brew.

Taste being the ultimate test, as mentioned in a previous post, over years experimenting and tasting, the ‘percolation’ brewing method we use in house (as in the photo) has, in our humble opinion, always had the edge over immersion brewing and does taste quite different.

Most companies producing cold brew use immersion as far as we know. Which is why grabbing some of our percolated house brew is a good idea (and we only produce small batches so grab it when it’s there).

The ‘percolation’ method is also quicker (takes 8 hours)

We’d always trusted our taste buds but never looked into the science.

So for the nerds, coffee geeks and general home cold brewers out there ...

It turns out that the crucial difference between a percolation and an immersion is simple: a percolation extracts coffee with clean water, and an immersion extracts coffee with water that is gradually becoming more and more concentrated, because water sits in with the coffee grounds for the whole brew.

The science that explains this is the physics of diffusion and is described by the Noyes-Whitney equation.

With the weather warming up you may have noticed our cold brew drip stations in the shop start up.

Most cold brew is made by immersing the coffee in cold filtered water. Especially easier for large scale cold brewing.

But we find this percolation method always tastes better. It gives a smoother ‘bourbon’ style taste (minus the alcohol).

It’s definitely a small batch method, takes 8 hours to brew and the result is deliciously refreshing.
