’s new ‘Beetroot Laab’ is hands down our favourite dish this week. Sweet candy-coloured beetroot is mixed with lentils and topped with some tasty marinated tofu and fresh mint. It’s then served alongside some creamy coconut rice, and cut through with a zingy tamarind sauce. No, our mouth isn’t watering, yours is.

CREAMY TAHINI BUTTER BEANS WITH ROASTED SHALLOTS & BABY COURGETTE 🧄🥒. The ultimate healthy comfort food to enjoy on a balmy summer’s eve or alongside your summer feast. This is a wonderful hybrid of middle-eastern and southern Italian flavours; giant butter beans are simmered slowly with tahini, a generous handful of herbs and some lemon. Topped with some sweet roasted shallots and seasonal baby courgettes. But what truly makes this dish stand out is the crunch from the nutty, savoury granola topping. Yum. (Recipe via link in bio).
