💁🏻‍♀️What are you having for lunch today?
This was me and yesterday! Gluten free tagliatelle with grilled veggies!
👩🏻‍🍳Grilled veggies may take a little to be prepared but you can make lots of them and then use it in different ways!
I had them on my millet for dinner and I will put some on my pizza later!

👩🏻‍🍳Lovely recipe for a rainy Sunday!
This are called 💋Baci di Dama, which it translate to Lady Kisses.
💁🏻‍♀️Why? Because they are meant to be delicious and delicate!
They are made with almond and hazelnut flour and kept together by chocolate! 🤤🤤

Here is the full recipe:
75g almond flour
75g hazelnut flour
150g vegan butter
150g coconut nectar sugar
200g plain gluten free flour
30g egg replacement
( 30g water with 1.75g psyllium husk)

👉🏻Preheat the oven at 170*C.
👉🏻Whisk the water into the psyllium until there are no more lumps.
👉🏻Mix sugar and butter together.
👉🏻Add the psyllium and mix again.
👉🏻Add all the flours and bring the mix into a dough.
👉🏻Don’t overwork the dough!
👉🏻Divide the dough in equal balls of 2cm each ( you should get roughly 50 balls, which equals to 25 biscuits).
👉🏻Line 2 trays with backing paper.
👉🏻Press them lightly on the baking tray, enough for the balls not to roll everywhere and bake at 170*C for 15 minutes!
👉🏻Allow to cool down completely then place them in the fridge while you melt 50g of dark chocolate.
👉🏻Place some chocolate on the base of half of your biscuits and then place the other half on top, like a little sandwich!
👉🏻Let them rest few minutes, until the chocolate is completely solid and then enjoy!!

Notes*
You can use regular plain flour instead of the gluten free one.
Any brand of vegan butter will do,my favourite is , just don’t use coconut oil it won’t work!
Also if you prefer a soft center you can use a vegan chocolate spread instead of the chocolate 🍫!

And, 10 years ago, I didn’t turn vegan because of the planet or the animals, (that passion came after 💖🌍🙌🏻) I just did it for health reasons.

💁🏻‍♀️So why on earth would you come to me to get help transitioning to vegan?

Let me tell you WHY:

✅I am a passionate 👩🏻‍🍳chef that needed to bring creativity and delicious recipes back into her life, once I transition to vegan.
So I didn’t have to eat only salad 🥗 and plain grains!

✅I am a researcher and probably a bit of a nerd 🤓, driven by an incredible curiosity that encourages me to constantly dig deeper into books 📚and information 📊 that helps me to understand how the human body works and how our diet and lifestyle affects it!

👉🏻I am incredibly attached to 🇮🇹Italian traditions, because they made my childhood so 💖special.

👉🏻I adore cooking for my family and friends and make beautiful memories.💖

👉🏻I don’t just create recipes that are vegan, I STRATEGICALLY CHOOSE ingredients that are better for the body🌱 and have less negative impact on the planet🌍!

👉🏻But most importantly I love to SUPPORT and GUIDE people into enjoy cooking delicious meals, showing how EASILY you can create beautiful dishes!

absolutely one of my favourite! 😋

Here is all you need:

🍅For the bolognese sauce
200g seitan
1 onion
1 carrot 🥕
1 celery stalk
1 litre of passata 🍅
1 bay leaves 🍃
1Tbsp apple cider vinegar ( or a glass of white wine)
1Tbsp tamari sauce
1Tbsp olive oil
Salt and pepper

🍅For the bechamel sauce
700ml oat milk ( or rice milk for gluten free option)
70g coconut oil
50g potato starch
Nutmeg and salt

10 raw cannelloni
100g cheese 🧀
20g nutritional yeast flakes
20g bread crumbs

👩🏻‍🍳Tonight I thought I did a little experiment and it turned out absolutely delicious! 😋

Here is the ‼️RECIPE‼️:

👉🏻250g green lentils
👉🏻2 bay leaves 🍃
👉🏻juice of 1 lemon 🍋
👉🏻2TBSP dark tahini paste
👉🏻2TBSP extra Virgin olive oil
👉🏻Salt
👉🏻1/2tsp ground cumin
👉🏻1 garlic clove

✅Cook the lentils in salted boiling water for 30 minutes with the bay leaves.

✅Drain, remove the bay leaves and leave to cool down.

✅Blend the lentils with tahini, olive oil, cumin, lemon juice, garlic and add salt if needed.

✅Keep in the fridge in an airtight container up to 4 days.

It’s incredibly delicious and so creamy! MUST TRY! 🙌🏻🙌🏻😘💖

💁🏻‍♀️Every time I think about pancakes 🥞 a funny memory always comes in my mind... 👉🏻that time I made pancakes for my dear friend .simplybe and he had 16 of them... 🤣🤣
