I suffer from a genetic condition called Ataxia Telengiectasia (A-T). Ataxia Telegiectasia (A-T) is a degenerative genetic condition with very limited treatment options and no cure so far. By 10, affected children will most likely be in a wheelchair, and develop cancer or lung disease by their teens. They probably won't live beyond their mid 20s.The A-T Society supports children and families and gives them hope. They work to improve quality of life and medical care for people with A-T and they fund research to find a cure.
100% of the money I earn from baking for events will be donated to the A-T Society.

9 years ago I had the honour and the opportunity to do 150 pink rose swirl cupcakes for Breast Cancer Now

(Order was made through My Baker)

I was both stunned and pleasantly surprised when the request for the order came through because only a few months prior I had undergone surgery for my own breast cancer diagnosis.

Talk about coincidence!

I can no longer pipe rose swirls due to my progressing symptoms but I am so proud of what I achieved back then 🩷

And yes those are boobie cupcakes πŸ˜‚πŸ©·

⭐ BTS: beneath the fondant ⭐

So a few months ago, a reel popped up on my Facebook feed stating that "fondant hides bad cake" (screenshot in 4th image)

This isn't true. Fondant can't hide "bad cake".

In fact, if the finish on your final coat of your cake is rough, uneven or has imperfections, the fondant will simply adhere to these and accentuate every crevice. This results in an unsmooth "bad cake" (I think what the reel was referring to?)

I use chocolate ganache for the final coat of my fondant cakes, and buttercream and jam as a filling.
I pipe a ganache dam on each layer to stop the jam leaking out into the final coat.

You can see that my ganache final coat is even, smooth and clean. This helps me achieve a crisp, sharp finish when I apply my fondant.

As I've mentioned in a previous post, my kitchen isn't very aesthetic so I used AI to change the background of my photos as well as add the decorating equipment. But the cakes you see are 100% my own as they are.

The truth about fondant: Part 2

Both fondant and buttercream can give a clean, crisp, sharp look to a cake. But this depends on the skill and preference of the baker

For me, personally, I think my fondant cakes look cleaner and smoother and I prefer doing them over buttercream cakes. Fondant cakes are a lot more stable and easier to handle in terms of transportation and storage.

But buttercream cakes have their place too! And rightly so! I do both types of cakes, but as you can see my fondant skills are better and I find I'm able to do a lot more with fondant than buttercream.

So if you want a particular aesthetic for your cake but it can't be done with buttercream, don't be put off! Go for the design you want.

And remember, the thin layer of fondant takes seconds to remove, and much like a herb sprig on a fancy plate of dinner, it doesn't have to be eaten ❀️

The truth about fondant: Part 1

Fondant receives a lot of hate. And I get it. It's not the nicest thing to eat.

It's sickly sweet and it's chewy texture against soft, melt in the mouth cake is unpleasant.

But hear me out...

Custom made fondant cakes aren't like the supermarket fondant cakes.

People hear fondant cake and immediately think of the THICK layer of fondant they find on supermarket cakes and get instantly put off.

But custom cake decorators don't cover cakes in the same way. We understand that the majority of people dislike fondant and we cater for that.

The thin layer of fondant takes seconds to remove, and much like a herb sprig on a fancy plate of dinner, it doesn't have to be eaten ❀️

You're not wasting the fondant. It's like garnish, or a banana peel. It makes things look pretty and protects the cake inside ✌🏽

And even now I find myself having to tell people that I'm a pharmacist too, just so they take me seriously 😫 - (although this is probably more because I look 12, rather than because I'm a baker πŸ˜‚)

I know, I know! It's far too early for Christmas.

But Christmas Fruit Cakes are made in advance to allow all the Christmassy goodness and flavours to soak in and the cake to mature.

So for those of you who love Christmas Fruit cake, please get thinking! πŸ™πŸ½

All my cakes are made to order (I don't make spares or keep any stock for last minute or emergency orders), therefore it is important that you get your orders in by September 1st.

This allows me enough time to shop, bake and make any fondant decorations for your cake.

Collection dates for your Christmas Fruit cakes will be:
β€’ Monday 21st December
β€’ Tuesday 22nd December
β€’ Wednesday 23rd December

The pictured cakes are examples to show what each size cake looks like. Please refer to the images to see the serving size for each cake.

NB the listed serving sizes are based on generous portions. All serving sizes are approximate.
