🍅 From the kitchen garden to your plate.

Pan-roasted cod, yellow tomatoes & chickpeas.

Those golden tomatoes haven’t travelled very far. They were grown by us in our kitchen garden, picked when ripe and brought into the kitchen to become the heart of this dish.

Sweet yellow tomatoes, chickpeas and beautifully pan-roasted cod.

As we head into autumn, we’re making the most of every last tomato the garden gives us. 🌱🇮🇹

At SHAMBLES, Negroni Week lasts a month. Because frankly, seven days never seemed quite enough. 😉

Oscar, John &Seb are behind the bar and waiting, the glasses are polished, the oranges are sliced and the Negronis are very much at the ready.

Classic, bitter, boozy and unmistakably Italian. 🇮🇹

🍂 Autumn on a plate.

Roast guinea fowl, butternut squash, mushrooms, cavolo nero & fowl leg arancini.

The breast roasted on the crown, with the leg given a second life in a crisp little arancino. Sweet butternut squash, earthy mushrooms and cavolo nero bring the whole dish firmly into the new season.

Rich, earthy and comforting.

🍷 In the glass, Etna Rosso. Elegant, fresh and savoury, with bright red fruit and that distinctive volcanic character that works beautifully with the roasted guinea fowl and earthy mushrooms.

Summer had its moment. We’re ready for this now. 🍂🇮🇹

It’s time to step up your game 😉. The first of the new season British grouse has arrived at SHAMBLES.

Roast grouse, farrotto, cold pickled radicchio & blackberries.

Farro is one of Italy’s ancient grains, cultivated for thousands of years and a staple long before risotto rice arrived on the scene. We cook it risotto-style, slowly with stock until naturally creamy, while keeping its lovely nutty bite.

And the w**e?🍷 Schiava, Manincor - Alto Adige

And there’s more Manincor to come…

Next Friday 21st August, we’ll be welcoming Manincor to SHAMBLES for a complimentary w**e tasting alongside dinner, giving you the chance to discover more w**es from this remarkable Alto Adige estate.

No lectures. No w**e snobbery. Just great w**e, seasonal food and plenty of curiosity and discovery by the glass.

Closed to guests but never standing still.

While we’ve been away enjoying a short summer break, SHAMBLES hasn’t been sitting idle.

Every wooden table has been sanded back and re-varnished by hand, ready for another season of great food, great w**e and great company.

Meanwhile, the kitchen garden has been doing exactly what nature intended. 🍅

Our cherry tomatoes, San Marzanos, beef tomatoes, yellow varieties and even the black tomatoes have all been ripening, perfectly timed for our return.

We reopen Wednesday 12th August, and we can’t wait to welcome you back.

After another busy season, it’s time for our team to take a well-earned holiday.

We’ll be taking a short break from Sunday 2nd August, reopening on Wednesday 12th August, ready to welcome you back with fresh seasonal food and plenty of great w**e.

🍅 Summer soup, served cold.

Our chilled yellow tomato soup is made using tomatoes we’ve grown ourselves, harvested at their sweetest and blended into a silky soup, finished with fresh basil and Chef’s balsamic caviar.

Light, refreshing and made for warm summer evenings.

And as for the second photo… those purple tomatoes in our kitchen garden are almost ready. We can’t promise anything just yet, but they might just inspire the next seasonal soup to make its way onto the menu. 🤷‍♂️

That’s the beauty of cooking with what’s growing - the garden decides what’s next.

Some restaurants have a w**e list. We have a little library. 🍷

Every bottle tells a story - a vineyard, a family, a vintage, a place and usually someone slightly Italian obsessed behind it.

Some are familiar favourites. Others are there to tempt you away from your usual order and into something new.

That is what our w**e programme is really about. Not collecting labels for show, but opening bottles, sharing stories and helping guests discover w**es they might never have discovered for themselves.

With more than 40 w**es available by the glass, curiosity does not need to involve committing to the whole bottle.

Although, naturally, it sometimes ends that way. 😊

🥩 A very special arrival from Italy…

We’ve just taken delivery of an exceptional Marango Costata - one of Italy’s most exciting premium beef projects.

Marango originates in central Italy and is the result of carefully crossing Black Angus with the native Maremmana breed. The cattle are reared to exceptionally high welfare standards, spending their first six months feeding exclusively on their mothers’ milk before continuing on a carefully balanced natural diet. This slow, traditional approach helps produce beautifully marbled beef with remarkable tenderness, succulence and depth of flavour.

Raised on open pastures, Marango develops exceptional intramuscular marbling that gently melts during cooking, delivering beef that’s incredibly juicy, richly flavoured and wonderfully tender.

Our ready dry-aged costata has arrived at its peak and will be cooked over our wood-fired grill, where the intense heat creates a beautifully caramelised crust while preserving its rich flavour and tenderness.

This is steak at its finest - deeply flavoured, beautifully marbled and made for sharing with a great bottle of Italian vino.

Available for a limited time while this special cut lasts.

Sunday roast beef salad, sliced the old-fashioned way.

Every joint of our roast beef is carved on our traditional hand-operated flywheel slicer, producing paper-thin slices that simply can’t be replicated by a modern electric machine.

It’s slower. It takes skill. And it’s absolutely worth it.

Just another one of those little details that makes Sunday’s at Shambles that bit more special.
