Four fresh salads on the counter this week, packed with colour, texture and plenty of flavour:

Roasted Butternut Squash
Cinnamon & rosemary roasted squash, sun-dried tomatoes, red onion, parsley & pomegranate.

Spiced Marinated Mushrooms
Balsamic, garlic & thyme marinated mushrooms with a touch of chilli, sun-dried tomatoes & fresh parsley.

Avocado & Chickpea
Avocado, chickpeas, peppers, grapes & pomegranate with fresh basil, lemon & toasted cashews.

Minty Couscous & Broccoli
Giant couscous with mint, cardamom & cinnamon, tenderstem broccoli, peppers, spring onion & pomegranate.

🌿 Curried Green Lentil Salad
Mildly spiced green lentils with peppers, spring onion, sun-dried tomatoes, parsley & pomegranate.

🍇 Spiced Green Pea Salad
Green peas, courgette, peppers & juicy grapes, tossed with lemon, chilli and fresh herbs.

🍆 Roasted Aubergine Salad

🎃 Pumpkin Spice Spritz
A little taste of autumn 🍂 Gin, warming pumpkin spice, fresh lime and a splash of ginger ale, finished with fresh ginger.

🍹 Papa Doble
Fruity, zesty and a little bit cheeky. Rum shaken with grapefruit, lime and cherry, finished with a maraschino cherry.
