Inspired by the vibrant flavours celebrated in Georgina’s bestselling cookbooks, Greekish and MEDesque, this salad is a love letter to long Mediterranean lunches and the food of her Greek-Cypriot heritage.
At its heart is a new souvlaki-inspired honey & herb chicken, layered with juicy tomatoes, cucumber, pickled red onion, black olives and a generous scoop of hummus. All tied together with fresh mint, coriander, sesame seeds and a new creamy lemon-feta dressing.
