One more week with our baby squid dish.
A squad of Cornish baby squid, cooked directly over our charcoal grill, served with Cacao Bianco beans from Italy, slow-simmered with fennel and chorizo into a warming stew. Dolloped with an anchovy salsa verde that romps around the plate, comprising an umami-laden dish.

From the 2nd to the 8th of March, we are so excited to be introducing a co-curated wine menu with Naughty Piglets’ very own, Margaux Aubry and our very own Anna Dolgushina.

Anna and Margaux have compiled a select few wines from the bounty of female wine producers that make up the industry. A wonderful list of typically rare whites, reds and skin contacts, which, for this week, can be tried by the glass.

Available at Firebird from 5 pm Monday, 2nd March, through until Sunday 8th March.

A special Pinot Noir “La Cruci” from Haute-Côtes de Beaune, under Tino Kuban’s négoce label Maison Glandien.

Tino farms just 1.5 hectares at Les Jardins Vivants (”The Living Gardens”) in Meursault. Quantities are small and intervention is minimal, producing bottles that are already cult-followed. Through Maison Glandien, he sources grapes from trusted growers and labels the wines Vin de France for freedom beyond appellation rules.

“La Cruci” is juicy, layered with vibrant red fruit wrapped in balsamic tones that yields its structure. Pure and full of life.

A gracious plate of smoke and sea. Black Iberico tomato, slow-smoked and gently cooked, mingling with garlic, olive oil and sherry, shares the plate with tender Skrei cod. Seasonal and poached in clarified butter is an utter delight. Through it all, crispy focaccia morsels add texture across the plate.

A wonderful, by the glass, 2022 Muscat “What Could Go Wrong?” Yo El Rey from Breedekloof, South Africa.

Yo El Rey is a négociant project by Angelo Van Dyk, a winemaker known for his rare sensitivity and precision. Produced in small batches with a low-intervention philosophy, the wines are made without unnecessary adjustments.

This South African Muscat, locally known as Hanepoot and traditionally destined for sweet wines, takes on a different shape here. Angelo instead allows for about a week of skin contact to build grip and structure, followed by time in old oak, allowing the wine to subtly gain depth.

It’s aromatic in waves with a texture you can feel, that makes this wine dangerously easy to drink.

Some seasonal menu contenders.

Cornish Brill. Grilled and served to revel in a smoked leek pil-pil sauce. A fish deep in flavour and delicate flesh that trembles at the helm of the fork. The charred leeks, rich in their own pectin and Turbot fish stock, become the backbone of a pil-pil. Finished with an oil, bringing together charred leek tops.

Cedro and celariac sliced to translucence, balancing brightness and soul. Placed over a musky celeriac purée. Olive oil, lemon juice with a helping of quinoa and dried chilli seed za’atar, which delivers that final fragrant edge.

PX Caramel. Our take on the classic creme caramel. The caramel is laced with Pedro Ximénez sherry and bay leaves left to infuse in the custard, adding an earthy swing to the sweet.

Perhaps the rain has settled in for the week. Perhaps the sky is a steadfast shade of grey, and your coat hasn’t quite dried since January. But mentally? We are in Piemonte.

For days like these, we open the northwestern corner of Italy. From right to left:

2020 Barolo Scarzello
2020 Barbera Cascina Borgatta
2023 Langhe Nebbiolo Lapo Berti

Barolo is 100% Nebbiolo, 38 months of patience, 18 in oak, tar and wild berries, rosemary and damson, tannins woven tight and bright. Scarzello does it the old way, long macerations and large botti.
Barbera from Cascina Borgatta, coming from just 2 hectares, is tended by hand by a couple in their 80s. Dark plum with a heft of spice and electric acidity.
Langhe Nebbiolo from Lapo Berti in La Morra with three weeks on skins, over 18 months in barrel, bottled unfined and unfiltered. It’s a slow unfurling of time. Perfumed, savoury and elegant.
