March 24, Gelato day.

We had the honour to be part of an event in Rome, hosted by , the only day officially recognised by the European Parliament dedicated to artisanal gelato. 🍨
Gelato makers united from different cities for a full day of tastings, creativity, and sharing.
This year’s theme, “The Gelato That Makes Europe Sing”, is about harmony — different cultures, ingredients, and ideas coming together in one flavour.
And honestly… that’s exactly what we felt... and even more meaningful knowing the day was also for supporting the charity "Il Cuore Grande di Flavio", reminding us that gelato can bring people together not just through flavour, but through purpose.

“Certainly yes, because we’re about to tell you the wonderful story of these two Italians who are taking London by storm with their little cart — and imagine, their homemade gelato has basically become one of the hits, one of the must-try things people now look for when they visit the British capital.”

“At the beginning they simply started with a small counter-top machine, just a little cart on wheels — Wave Gelato. With no budget, they invented their own job, and now this Wave Gelato has become a name that’s circulating at London events. They’re present at festivals, in markets, and they collaborate with public institutions.”

“They do catering, right?”

“Yes, yes, they do a bit of everything, really — and they’ve won over the English capital. For example, they’re doing events in prestigious places, like my favourite, Covent Garden.”

“The thing is this: it’s all very Italian. They said, ‘Considering inflation and the high cost of living — especially in London — we couldn’t afford to rent a shop and pay all the taxes that come with that kind of business. So we thought a little cart would be very, let’s say, original and full of character.’”

“Their style is modern but rooted in tradition, with a technical and innovative approach. The only permanent flavour is vanilla, but then they change the menu every three months — and what makes the difference are the spices, all kinds: from apple sorbet with Nepalese pepper, to lemon and lavender with a bit of bitterness in it and fresh lemon… Now I’ve got the urge to take a trip to London just to taste Italian gelato — the gelato made by these two guys.”
