Most people ask which wine goes with seafood.

At Baccalà, we think the better question is:

How is the seafood prepared?

A delicate crudo, grilled mackerel and a rich seafood pasta may all be seafood, but they’ll rarely call for the same wine.

The cooking method, the sauce, the texture and the balance of the dish all play a part.

That’s the approach our co-founder and Head Sommelier, Fabio De Nicola, recently shared in Decanter when discussing seafood and wine pairings.

This is the first of a new series where we’ll share more of the thinking behind the wines we choose and why they work with the dishes we serve.

Growing up around Italian culture, one thing that always stood out to us was the importance given to lunch. Not because the food was elaborate, but because the meal itself mattered.

It was a moment to stop, catch up, discuss ideas, celebrate good news, solve problems, and spend time together.

Perhaps that’s why we have always believed lunch deserves the same attention as dinner.

We’ve been featured among the best lunch restaurants in London.

When we opened Baccalà in December 2019, we never imagined our little seafood and wine restaurant on Bermondsey Street would be recognised alongside some of London’s best places for lunch.

Lunch for us has always been important — a slower pace, seafood to share, a glass of wine, stories from our producers, and the feeling of sitting around a table with friends and family.

Thank you to everyone who has joined us over the years.
