This is a dish I submitted to a competition.

It didn't get selected 😕

An upgrade of our Bone Marrow.

Topped with reversed braised birria with a mustard and habanero emulsion. Mignonette style red onion and a color palette inspired by Dia de Mu***os colors.

I feel it deserves a new lease of life on our menu.

We made our own Queso. We embedded Fresh and roasted Jalapeños in it, baby herbs.

Then we made a Jam with dates, raisins, raspberries, Chipotle Meco and smoke.

Then we made crispy Sh*take Mushrooms.

Then a salsa made with fried Guajillo.

Then corn flowers.

The iceberg illusion....

Yes, it looks simple but there's a lot of thinking behind this.
