Kinpila is one of the classic dishes of Japanese home cooking, made by frying and then simmering seasonal vegetables.
We stuff the kinpila into our addititive-free, natural Akita-yeast bread to create a kind of oyaki-style dumpling, which has an unusual crunchy texture from the kinpila.

This additive-free bread is made using natural yeast from Akita prefecture, a rich mushroom gratin and the distinctly Japanese flavours of miso and sake lees. The texture of the mushrooms and the faint aroma of sake lees combine in a snack bread with a grown up taste.
