Summer Salad๐
250-300g ripe tomatoes at room temp (Iโve used cherry here)
1 large ripe white peach (chunky slices)
2 tbsp Chardonnay vinegar (can be replaced with sherry, white wine or apple cider)
Dill (can be replaced with basil)
Handful of roasted pine nuts
Salt, pepper, pinch of sugar, 1/2 clove grated garlic (optional)
Gently crush (with a small rolling pin or with a back of a spoon) ripe tomatoes in a bowl. Season with saltand pepper, grated garlic, a good splash of Chardonnay vinegar and olive oil, mix well and let it macerate (leave it aside for min 15 min to release and intensify tomato juice and flavour).
Toast a handful of pine nuts in a small frying pan until golden brown.
Pick some dill and roughly chop.
Assemble: add peach slices, toasted pine nuts and dill into the macerated tomatoes, toss well (taste for seasoning) then serve. Crusty bread is a must to soak up all the delicious juices!
