Eggless Fruit Cake

Makes: 1 x 8-inch cake
Oven: 170°C fan / 180°C conventional
Baking time: 45–55 minutes

Ingredients

* 200 g mixed dried fruit
* 100 ml orange juice
* 100 ml milk
* 100 g unsalted butter, melted
* 120 g brown sugar
* 1 tsp vanilla extract
* 180 g plain flour
* 1½ tsp baking powder
* ½ tsp bicarbonate of soda
* 1 tsp cinnamon
* ½ tsp mixed spice
* 2 tbsp chopped nuts (optional)
* 1 tbsp orange zest (optional)

Method

1. Soak the fruit: Put the dried fruit and orange juice in a saucepan. Warm gently for 3–4 minutes, then remove from the heat and leave for 15 minutes.
2. Prepare the batter: Add the milk, melted butter, brown sugar and vanilla to the fruit mixture. Stir well.
3. Mix dry ingredients: In a separate bowl, sift together the flour, baking powder, bicarbonate of soda, cinnamon and mixed spice.
4. Combine: Gradually fold the dry ingredients into the fruit mixture. Don’t overmix. Fold in the nuts and orange zest if using.
5. Bake: Pour into a greased and lined 8-inch cake tin. Bake at 170°C fan for 45–55 minutes, until a skewer inserted in the centre comes out clean.
6. Cool: Leave in the tin for about 10 minutes, then transfer to a rack to cool completely.

✨ For an extra moist cake

While the cake is still warm, brush the top with 2–3 tablespoons of orange juice. It will soak in beautifully.

Tip: For a more festive Christmas-style fruit cake, add ½ tsp ground ginger and 2 tbsp chopped glacé cherries.
notes: i used vegetable oil instead of butter. i added 2 tbsp of fine semolina and 2 tbsp of full cream milk powder. takes about 45 minutes to cook through. tastes delicious and the home smells like its Christmas!!i forgot to add the nuts so its just a fruit cake, NOT for those on sugar watch!!!

After nearly 18 wonderful years at Mintel, it’s time for me to begin an exciting new chapter.

Like many people, I felt a little lost at first. But I’ve come to realise that every ending creates space for a new beginning, and I’m choosing to embrace this opportunity with optimism and gratitude.

A year ago, I suffered a stroke, and at times I genuinely felt it had nearly destroyed me. It changed my life in ways I could never have imagined. But I refused to let it define me. With determination, faith, and the support of incredible people around me, I kept fighting every single day. That journey has taught me resilience, gratitude, and the importance of believing in yourself, even when life feels at its hardest.

I’m delighted to be back doing what I truly love—creating bespoke cakes and teaching the art of cake decorating to anyone who dreams of learning a new skill or starting a side hustle.

I’m slowly building my portfolio, and I’m thrilled that my work is now reaching clients across London. I’ve also had the pleasure of baking for clients in Los Angeles, where my cakes received such a wonderful response.

A huge thank you to every client who has trusted me to be part of their special celebrations, and to those who have recommended me to family and friends. Your support and encouragement mean more than you’ll ever know.

To anyone facing unexpected change, remember that it doesn’t have to be the end of your story—it can be the beginning of something even better. I loved my career and gave it my all, but I also believe that God has a plan for each of us, even when we can’t see it at first.

Here’s to new opportunities, new friendships, new adventures, and plenty of beautiful cakes! I’m excited to see where this journey leads, and I hope you’ll come along for the ride.
