From flame to table, this is a dish shaped by memory.
In Bengal, prawns (known as chingri) are a prized ingredient often saved for celebrations. In our kitchen, King prawns are charred in a tandoor before being brushed with Romy’s house spice blend, creating layers of smoke, warmth and fragrance.
Romy says that “as a chef, I have learnt to respect ingredients, tradition and the stories behind the food we eat. I am constantly curious and always learning, but at the heart of everything I cook is the food I grew up with and the memories attached to it.”
