Preparing a falafel wrap at the delightful where I’m popping up today in the sunshine. I’ve spent months tinkering with my falafel recipe to try to get them to taste like the ones I used to buy from a little stall just inside the Damascus Gate of the old city of Jerusalem: these were the best I’d ever tasted. I think I’m close! These go into warmed wraps (proper Middle Eastern khobez flatbreads, not tortillas!) drenched in creamy, lemony tahini sauce and tons of crunchy salad with fresh herbs.

Preparing some of the dishes for a 40th I’m catering this evening: chargrilled cauliflower and butternut squash with tahini; fattoush salad; beetroot in yoghurt with date and pomegranate molasses; chilli jam (which I’ll be spooning onto our za’atar fried chicken nuggets: the sweet, spicy jam goes wonderfully with the crisp, hot nuggets)

My colourful lunch before I head to to set up my stall: toasted sourdough (made brilliantly by …I’m so lucky to have this regularly made at home!), home made tomato sauce from over ripe tomatoes, mature cheddar, home pickled cucumber and pepper: DELICIOUS! That’s set me up nicely for what I hope will be a very busy session on the stall!

We’re thrilled to be back at this Saturday for their Dalliance evening, one of our favourite events to pop up at! We’ll be serving from 4 until 9 with beef shawarma, Alburnia (aubergine and bell pepper curry) and crispy pakoras on the menu. Chicken thighs and breasts just out of the oven. We brined this overnight, marinated it in our top secret spice mix for a day, and blasted it in the oven to crisp up the skin. We’ll slice this all up and mix it with the flavour-bomb juices, to give us our chicken shawarma. This Friday, at we’ll wrap this up in hot flatbreads with salad, pickles, olives, lemon & garlic mayo and our very own habanero chill sauce (optional, of course!) And what better accompaniment? Crispy, skinny fries. Perfect food to go with their excellent beer!

I’ve had a phenomenally (for this time of year) busy lunch service at the delightful , now I’m chilling in the Autumn sunshine looking over their lake. I love popping up here: the customers are super friendly and complimentary, and the staff very welcoming. They brew their own beer here, which is delicious, so I recommend a visit here

As always, it was an absolute pleasure feeding the 100 hungry brewers at  yesterday (and I’ll be back there this evening...

As always, it was an absolute pleasure feeding the 100 hungry brewers at yesterday (and I’ll be back there this evening with more grub to keep them going). It’s a fantastic beer festival organised by with superb craft brewers from all over the world (even China!) in the gorgeous grounds of Glynde Place. Thank you for your help and thank you Lola at Beak and Ruben at for inviting me back, this is one of my favourite gigs of the year!

Absolutely delighted to have been invited by the lovely Steve and Bethany to pop up this Saturday at their latest venture, the newly reopened Trevor Arms in Glynde. They’ve got a huge pub garden with views of the Downs, a lovely selection of local craft beers, and it makes a perfect walk from Lewes. We’ll be serving Middle Eastern street food from noon till 8ish. Hope to see you there!

Lovely peppers I got hold of early this morning from These are from Jersey, so almost British grown! I love this time of year when I can source my veg a bit closer to home. These will be roasted for my alburnia, the veggie option I’ll be serving at this Friday. (Alburnia is a deeply flavoured stew of roast peppers, aubergine and tomato with loads of garlic, olive oil and spices)

Last night a DJ saved my life! I was popping up at on their regular vinyl night and due to staff sickness was alone….with 100+ punters to feed! At around 8 I was feeling the pressure big time when the DJs, Sylvie and her Dad Tony joined the queue for some well-earned grub. Sylvie could clearly see I was going under so offered to step behind the counter and help me, which i immediately took her up on. Seconds later, she was taking orders with charm and confidence. She stayed on for a good 40 minutes helping me clear the backlog before going back to her decks to play some absolute bangers that got me through the rest of the night. Thank you Slyvie! Well done Tony for raising such switched on girl!

Yesterday’s lunch: INCREDIBLE chicken soup with sourdough bread, BOTH made by but I’ve pimped the soup wirh some roast common hogweed! What the hell?! you’re perhaps thinking. It’s a little known (and unfairly feared) delicacy that can be foraged easily at this time of year. I pick the new, unfurled shoots from among the plants and roast them for around 10 mins with a little olive oil and salt. Their flavour is immense: a cross between parsley, celery and asparagus with something else unique, and the roasting sweetens them. Amazing in omelettes too

It’s been a busy week prepping for lots of different things: delivery meals, private catering and a couple of taprooms ( Sunday 12 till 4ish and this evening from 5ish). Here are pix of some of the dishes I’ve been making: (1) a colourful tabbouleh with pomegranate which has a dressing with date syrup and pomegranate molasses. (2) Roast aubergine in yoghurt with caramelised butter (a dish I enjoyed immensely on our recent family holiday to in Kabak, Turkey). (3) Charred cherry toms with olive oil, thyme and cumin on yoghurt. (4) These are just soaked urid dal (which I cooked into a dal), but I love the colour of them
