Meet the prep that’s been taking over the kitchen. Spanish artichokes, blanched with sage, thyme and tarragon — they’re joining our summer roast lamb leg and honestly they might steal the show. There’s something about that purple-tinged heart that just screams the season.

A quick spotlight on some real seasonal dishes that utilise wild garlic in some form…

The wild garlic season will be over soon so make sure to book a table to savour the taste of spring while it’s still here!

Skate wing with asparagus, morel, sea herbs and chicken fat butter sauce.

Rabbit cordon bleu with snail and ossau iraty cheese, morteau sausage, wild garlic veloute and confit carrots.

And a dish from our lunch time set menu - orecchiette in wild garlic pesto topped with venison ragu and Parmesan.

Showcasing our brilliant mushrooms throughout our menu at the moment.

We have some beautiful morels that get stuffed with chicken truffle mousse. Going on the skate and the rabbit cordon bleu.

Also some amazing variety’s of enoki, coral and oyster mushrooms that get cooked 3 ways and served on a board. Karaage fried, yakitori skewers and dengaku glazed. With heaps of sansho miso mayo and black garlic.

When the wild garlic is flowering like this we know that spring has well and truly arrived. Toasted sourdough with wild garlic pesto and whipped nettle butter 🧈 for all the sauce mopping.

To follow we have our new skate dish, glistening in chicken fat butter and wild garlic pesto! Perfectly balanced with sea veg and English asparagus, chicken and truffle stuffed morel mushrooms, and a good helping of mushroom ketchup.

At Dill we have been working with foragers since we opened our doors! One of those amazing people is Andy, who loves to bring weird and wonderful things that he finds and no one else is using. Take a look at our first of the season sea herbs and veg.

We have sea kale 🥬 vibrant purple and delicate texture. Salty fingers 🌱 bright and briny, offering a pop to the plates. And one we’ve never seen before - pepper dulce 🪾 this is also called the truffle of the sea due to its truffle flavour.

For the month of December we will be serving a special Christmas menu, available at every service throughout the festive period. The menu follows our usual format, with seasonal dishes that change with availability from our growers and suppliers.
