Cabbage Manchurian is the ultimate Indo-Chinese comfort food—crispy, spicy, and tangy.
🛒 Ingredients
For the Veggie Balls:
* Cabbage 2 cups, finely shredded or minced
* Carrot ½ cup, grated (optional)
* Ginger-Garlic Paste 1 tsp
* All-Purpose Flour (Maida) 3-4 tbsp
* Cornstarch 2-3 tbsp (for crunch)
* Spices: ½ tsp Red chili powder, ½ tsp Black pepper, salt to taste
* Oil For deep frying
For the Sauce:
* 1 tbsp finely chopped garlic, 1 tsp ginger, 2 green chilies (slit)
* Onions ¼ cup finely chopped (or spring onion whites)
* Bell pepper ¼ cup, diced small
* Sauces: 1 tbsp Soy sauce, 1 tbsp Red chili sauce, 1 tsp Vinegar, 1 tbsp Tomato ketchup
* Fresh spring onion greens for garnishing

💚 Prep the Balls
Extract Moisture: Place the shredded cabbage in a bowl with a pinch of salt. Let it sit for 5-10 minutes, then squeeze out the excess water firmly with your hands.
(Pro Tip: This is the secret to crispy balls that don't fall apart!)
* Add the ginger-garlic paste, spices, flour, and cornstarch to the cabbage.
* Shape: Mix well (don't add water!) until it forms a dough-like consistency. Roll into small, bite-sized balls.
* Fry Until Golden
1. Heat oil in a deep pan over medium-high heat.
2. Drop the balls in batches. Fry until they are deep golden brown and crispy on the outside.
3. Drain on paper towels and set aside.
💚 Toss the Manchurian
1. Sauté: In a separate wok or large pan, heat 1 tbsp of oil. Add garlic, ginger, and green chilies. Sauté on high heat for 30 seconds.
2. Veggie Crunch: Add onions and bell peppers. Stir-fry for 1 minute—you want them to stay crunchy.
3. Sauce it Up: Lower the heat and add the soy sauce, chili sauce, ketchup, and vinegar. Stir well.
🧡Optional: If you want a "Semi-Gravy," mix 1 tsp of cornstarch with 3-4 tbsp of water and pour it in now to thicken the sauce.
4. The Final Toss: Turn the heat back to high, toss in the fried cabbage balls, and coat them quickly in the sauce (about 30-60 seconds).
