☕️ There is something so comforting about the smell of a fresh bake filling the kitchen. The latest addition to my nostalgic cake series is officially out of the oven: a simple, honest Coffee and Walnut Loaf Cake.

🍞 I love making loaf cakes because they are so wonderfully rustic and uncomplicated. For this one, I folded plenty of crunchy chopped walnuts into a rich, coffee-infused sponge. Instead of messing around with layers, I just topped the whole loaf with a generous swirl of silky coffee buttercream and some extra walnut halves.

✨ It is the absolute perfect slice to enjoy with a quiet cup of tea or coffee, while planning my next vintage bake. It really takes me back.

Stripping it all back to the classics. 🍋✨

Lately, I’ve been thinking a lot about the bakes that truly matter. The ones that don’t need fancy fondant or edible gold leaf to shine. I’m talking about the recipes our grandmas kept in handwritten notebooks—the ones that make the whole house smell like home.

Continuing in my reset and returning to the basics, starting with a true staple: the Classic Lemon Drizzle. No trends, no shortcuts. Just buttery sponge, zesty lemons, and that nostalgic crunchy sugar crust.

It’s honest, it’s simple, and it’s exactly why I fell in love with baking in the first place. It feels good to be back to my roots.

I spent some time in the kitchen last weekend making my banana and chocolate chip loaves. 🍌🍫

These are 1lb loaves made from an old recipe I had lost for 10 years and they turned out great, I have missed this recipe.

I made sure to pack in plenty of banana and enough chocolate chips so you get some in every single bite.Nothing fancy, just a really good, down-to-earth cake that goes perfectly with a brew. ☕️

I am really enjoying getting back to the old favourites, being less reliant on palm Oil and connecting with older recipes

It’s so good to be back at the bench! After an extended break, there’s always a little hesitation about diving back in, but this past week was the perfect reminder of why I love what I do.

I had the pleasure of making Orianna’s cake, and it was exactly the "slow burn" creative process I needed. It was a classic Victoria sponge, made extra special with my own homemade vanilla extract and a rather lush strawberry jam. 🍓✨

You know those projects where you have a specific vision in your head, but as you start working, the cake begins to take on a life of its own? That’s exactly what happened here.

Instead of forcing the original plan, I let the
design develop naturally. I especially loved getting lost in the details of the topper—there’s something so therapeutic about spending a few quiet hours designing and hand-crafting those finishing touches.

It wasn’t the cake I initially saw in my mind’s eye, but I think I like this version even better. It’s felt wonderful to move from "rest mode" back into "creative mode," one delicious layer at a time. 🎂

Christmas traybake is also an April traybake for my lovely customer. Since 2021 I have made this twice a year. Life is too short to wait until Christmas for your favourite things
