Yesterday saw the first outing of our Banoffee Cheesecake with a pretzel base. It got a lot of love. Usually we’re all about the pastry when it comes to desserts. If you’ve been following us you’ll know how much we love a pie and yesterday’s offering was Peach and Blueberry. Yum! But we also love a cheesecake!!
In a break from the norm (for us) our Banana Cheesecake is a set cheesecake rather than a New York Style baked cheesecake. Banana Flavoured cheesecake with real banana, whipped cream and a rich toffee sauce. But it’s the pretzel base that brings the whole thing together. Almost savoury with little spikes of salty nuttiness. It just really really works.
So another definitely maybe for our HCTB menu when we launch later in the year!!!

Today Jo is making the sweet pies for this weeks’s . Pies aren’t something you can just sling out. They take time and planning. Pastry is pernickety and needs to be treated with care. Don’t over work it. Let it rest. A hot kitchen and it melts in your hands. A cold kitchen and it’s a test of your strength to roll it out in to that pleasingly perfect circle.
Cut the lattice. Work the crimp. Egg wash. Sprinkle liberally with Demerara sugar. And freeze. Not chill. Freeze. So that when the pie is put in to that piping hot oven the layers of butter melt slower creating little pockets of air that makes that crust so flaky and delicious.

The pies coming out of our tiny kitchen in past years have always been a collaboration between Jo & Stu. Stu has always been the filling master. But the sweet pies are all Jo!
Taking influence from the Amish Pies much loved in the US, Jo’s pies are generous and full of joy. And they will be a staple on our menu when we launch.

Pies!!! We love em!!
Did you know that long before the Bun, even before , Jo & Stu were The Greedy Pig. And one night, to get the cash to knock down a wall so that cutomers could access to their toilet, they sold pies! People queued round the block for their pies. They sold out. And The Greedy Pig got its customer toilet.
But that was not the end of Pies at The Pig. Since then they’ve appeared at beer festivals, street food markets and even been requested for weddings!! And of course we sold Pies to be Baked at Home during lockdown. Pies were our saviour.
But now our pies have taken a sweet turn and Jo is absolutely loving the dessert pies she’s been making recently for The Bun. This week her Peach and Blueberry Pie features on our menu.
Jo is never happier than when making her pies. You could say it was her Hap-pie Place…

This is Paul's Super Bowl Chilli. It's called Paul's Super Bowl Chilli because every year Paul makes it for his Super Bowl Watch Party. There's lot's of Tequilla. And beer. There's a "Drink if you see Taylor Swift" game. There's some watching of sport. With much discussion of rules to only later be forgotten until next year. And there's big warming bowls.
Over the years Paul's perfected this chilli and he's agreed to let us put it on this week's menu so you can have your say too.

Made with Beef Short Rib, four types of chilli and three types of beans there is no other chilli like other around.
