A busy Leeds Tapas restaurant via Bogota, Colombia, New York (and a huge hand from London) – this is the story of the fantastic journey by made Colombian head chef, Viviana Vivas and husband, Andrés, who, along with front of house partner Jesus, a Castellano-Manchego, and partners Mark Burridge and Andy Moore, have brought with them a truly authentic Spanish dining experience. urant chains, mass menus and corporate dining, La Rambla welcomes you like an old friend with its relaxed, homely feel and ‘grandma inspired’ traditional Spanish cooking. Speaking of her experiences during the first 12 months, Vivi recalls “One day, while doing our very first croquettes, I had Andrés try them and a tear came out of his eye as he said: ‘If we make people feel what I’m feeling right now, then our job will be worth all the hard work’. I think he tasted the love and dedication. That’s what we want to bring to the people of Leeds.”
