Handpicked Coffee (Speciality Coffee) VS Commercial Coffee (Commodity Coffee)

The two ways farmers harvest their coffee fruit are handpicked and mass picked. The
handpicked version focuses on quality over quantity whereas mass picked methods use
machine harvesting or strip picking where they strip all cherries from a branch at once
regardless of how ripe they are.This method prioritises mass produce, which can often
impact the quality.

Here’s a breakdown of the two methods
Handpicked: workers revisit the same plant several times only picking the ripest (red)
cherries. This results in a sweeter taste and higher quality product.

Commercial: Machine harevesting is done on a larger scale, its quicker however it
doesn't receive the same TLC as hand picked.

Which one is right for you?

Choose handpicked if you enjoy an array of different flavours and prefer ethical,
sustainable sourcing. Usually speciality coffee.

If you prioritise affordability and convenience, choose commercial coffee.

How Does Altitude Affect The Flavour of Coffee?

There are many factors that affect how a coffee bean develops in taste, one of the many
factors is altitude.

High and low altitudes impacts the maturing process differently, which ultimately affects the
taste of the final product.

Higher altitudes create cooler temperatures and thinner air, which slows down coffee
maturation. This results in denser beans with more complex sugars and fruiter tastes.
Whereas coffee beans grown at lower altitudes tends to be nuttier or earthy.

Coffee grown in higher altitudes creates a harder, denser bean. They tend to preserve their
flavour for a lengthier time in comparison to beans grown at a lower altitude.

In a nutshell……

Higher altitude = slower growing beans = more interesting and complex flavours
Lower altitude = grows faster, less dense = nutty, chocolatey, earthy flavours

What’s the Difference Between Single Origin Coffee and Commodity Coffee?

Ever wondered what the difference is?

Here’s a bit of information about the two coffees.

Single origin coffee - think of this as coffee with a return address. It is derived from a specific farm or region. This is where its unique flavours come from.

On the other hand, commodity coffee (think of this as your everyday coffee) is mass produced mixed with various origins and sold based on standardised metrics rather than taste. This method prioritises low cost and volume over quality and ethics. Commodity coffee is often found in darker roasts.

Single origin coffee can be fully traceable from bean to cup whereas commodity coffee the
traceability is low and often blended.

Both coffees do different jobs; some days you might prefer a single origin coffee with fruity
and more delicate notes. Other days you might want an easy mug of coffee that gets you
through a Monday.

What’s the Difference Between Washed and Unwashed Coffee?

Let’s delve into the behind the scenes action that totally changes where it ends up in your
cup. Lets breakdown washed VS unwashed.

Coffee must go through many steps before arriving at the roasting stage. For all the coffee
lovers out there, this post is for you.

In today’s post we are going to look at the difference between the two most popular methods

- washed and unwashed. With both methods, the goal is to remove the coffee bean from the
layers of skin and mucilage that surround it.

Unwashed Coffee

Unwashed coffee, or the drying process, is a method that has been used for hundreds of
years. This is the most natural method of removing the bean from the layers of skin.

How it Works

First the cherry is washed then laid out to dry in the sun for several weeks.The cherries are
turned often, covered at night or if it’s raining. This process continues until the the cherries
moisture content reaches 11%

Washed Coffee

A relatively new method of preparing the bean, the washed coffee method is a little bit more
expensive.The difference with this method is that the coffee cherry is pulped straight after
harvesting, which means the outer layers, apart from the mucilage, are removed. What
remains is fermented water that is left for several days. The mucilage is then washed off the bean.

What’s the difference in taste?

The washed method produces higher quality coffee. The flavours tend to be fruiter, brighter
and cleaner. On the other hand the unwashed method produces coffee that’s complex,
smooth and has a heavy body. This method is used in countries where hours of sunshine is rare and there isn’t much rainfall.

Various factors determine the method of choice such as available water and sunlight,
altitude, soil levels and humidity.

Neither is better, it all depends on your taste preference.
