On Friday 1st May, we welcome George Birtwell and Samira Effa to The Small Holding for a one-off collaboration.

Drawing on time spent in some of the UK’s most celebrated kitchens, their cooking is rooted in seasonality, shaped by experience, and guided by a shared respect for produce.

Expect a six-course menu built around the seasons, celebrating our shared ethos:

Rhubarb, Honey, Woodruff

Our celebration of Kentish rhubarb. We have a blackcurrant wood oil cake, finished with Black Bee honey and topped with woodruff custard and rhubarb sorbet.

All finished with a rhubarb syrup seasoned with Loxwood Mead and a little more blackcurrant wood oil.

We’re incredibly proud to announce that Chloe Glen has been promoted to Junior Sous Chef at The Small Holding.

Over the past three years, Chloe has grown from Commis Chef into one of the strongest pillars of our kitchen. She is capable, calm under pressure, and brings a positivity that lifts our team every day. Her work ethic and attention to detail set the standard.

Working alongside Head Chef James Chatfield, Chloe is someone we trust completely to help lead the kitchen, and she continues to develop into a confident leader. A true success story of The Small Holding and a very well deserved promotion.

We're very proud of our soft drink pairing. We treat our selection with the same care and attention as our wine list. The pairing is made in-house using ferments, infusions and pressed fruits and vegetables harvested from our farm. Each drink is designed to sit naturally alongside our dishes, lifting the beautiful flavours of the season.

They’re not an alternative, but a pairing in their own right. Thoughtful, balanced, our current soft pairing as follows:

• Smoked Pear Juice, Rosemary, Garden Herbs
• Rooibos Tea, Clementine, Spruce
• Marigold Syrup, White Currant, Celeriac Leaf Tea

Lions Mane mushroom from Basil’s Funghi Farm in St Leonards. Cooked over the barbecue and glazed in miso and pickled walnut. Topped with walnut ketchup, crispy chicken skin and seaweed. Served with a mushroom dashi split with lovage oil.

We have some news from The Small Holding. After five years with us, is moving on to an exciting new opportunity.

Alex has been an instrumental part of what we’ve built here, and his mark on our farm and our team won't be forgotten. He’s heading to Borde Hill to set up their new market garden ahead of the restaurant opening next year, a project perfectly suited to his passion and talent and we wish him all the very best.

Thank you for everything, Alex. We’ve shared so many great memories and achievements together, and we’ll continue cheering you on as you take this next step in your career. We’re incredibly proud of everything you’ve accomplished, both personally and professionally and we'll be here for anything you may need.
