Chocolate does not begin as a percentage on a packet. It begins with cacao grown in a particular place.

Just as coffee or wine can carry the character of its origin, cacao can reveal fruit, flowers, nuts, spice, earthiness and much more. Where it grows matters, and so does everything that happens between bean and cup.🍇🍫

Next time you taste chocolate, pause before deciding whether it is simply “milk” or “dark”. What else can you notice?

Milk, dark, somewhere in between… choosing chocolate can feel more complicated than it needs to be.☕

The percentage is simply a useful clue. Generally, a lower percentage will taste sweeter and creamier, while a higher percentage brings more of cacao’s depth, bitterness and natural character to the cup.

There is no correct answer, only the flavour you enjoy.

A good cup of cacao contains magnesium, iron, and flavanols, naturally occurring, no processing shortcuts. It also contains theobromine, a gentle stimulant that's slower and softer than caffeine.

We're not saying it's a cure for anything. We're just saying: make it properly, sit somewhere quiet, no phone and see how the next ten minutes feel.
