A lovely birthday meal for melaniemckinley_8553 at thedueamici in Chislehurst. A beautiful restaurant with a really traditional feel. It was like stepping back into Italy. Great food and superb service. Thank you for a lovely evening.

Breakfast of champions. conservasortiz anchovies. steweeggs. Sourdough. French salted butter. Thes anchovies are not the ones you buy on the shelf in the supermarket, they’d plump, juicy and loaded with umami flavour. Honestly incredible. Yesterday I had them simply with buttered sourdough but having them with a perfectly poached St Ewe rich yolk egg, takes them to another level.

The anchovy brings salt, umami and richness, while the yolk adds sweetness and creaminess. When the yolk breaks and mixes with the olive oil from the anchovies, it effectively creates its own sauce. That's why the combination works so well.

There’s a little Spanish shop in Borough Market called brindisaspanishfoods. It has so much, it’s very easy to spend a fortune, but their hams, cheeses and of course, the wide range of Ortiz products is beyond excellent. A good day out for me would be a trip to Borough Market to go to breadaheadbakery, brindisaspanishfoods and then try and get home without tucking into anything before I get home!

As autumn creeps in… this is possibly one of my favourite things to make. A hug from the inside. Lamb Navarin. In case you’re wondering, it’s a lamb stew. Rich and so tasty, and the lamb (lamb shoulder) just melts in your mouth

Pad Kra Prow. Well, my attempt anyway. Pork, green beans and an abundance of basil that my auk is providing! So it should really be Thai Basil, but this worked and was super tasty. It’s so good knowing that I can take what I need from the Basil and they will just keep growing back. I’ve never been able to grow it, same with the Coriander. Now it grows and keeps growing! I love it. Thank you Auk.

At last I was home long enough to do a BBQ! Peri Peri chicken- I may have added a chilli or two, too many; crispy potatoes with chorizo, red onion and garlic; Tomato, red onion and basil salad with lime and smoked maldon; and Mango, avocado salad with lime, sherry vinegar, and citizensofsoil Citizens of Soil Extra Virgin Olive Oil. I could drink this stuff out of the bottle it’s that good. Both salad were dressed with it, the chicken marinade had it in and the chorizo was rendered in a little just to give enough smoky chorizo oil to mop up with the flat bread.

Lamb loin from dukeshill, superb quality and great flavour.

Ragù di manzo, maiale e salsiccia toscana. Otherwise know as Beef, pork and Tuscan sausage ragù. Lots of red w**e and cook for 4 hours to develop the flavour. I was given this recipe when working in . Beautiful place with beautiful people ‘e cibo bellissimo’.

Sirloin, so perfectly juicy it was like it was melting in my mouth!

Well, there you have it. I lovely Irish Stew (well done Mike) just perfect for this kind of weather. The highlight though was the Colcannon. I love it! Creamy buttery mash with savoy cabbage and spring onion.
