Few people return from Italy without lasting memories of its lush countryside, vibrant cities and clear blue sky and sea. When we are in Italy, we constantly scour the landscape, feasting my eyes on the fields of golden wheat and corn, the orchards of olives and lemons. As you travel south you start to smell the fertility of the land and see the fields alive with the colours of tomatoes, sweet peppers and aubergines. The true food of Italy is found in villages, where little has changed over the centuries, food is the whole focus of life there, so it has to be good.
