Hand Tied Bouquet workshop🌸🌼🐝

Join us in Knepp’s organic market garden for a morning of floristry and learning about regenerative flower growing. You’ll have the chance to see how our cut flowers are sown, grown and harvested on a tour led by one of our expert team.

Learn how we grow cut flowers organically with biodiversity, pollinators and soil health in mind. Participants will then pick their own seasonal stems and learn to condition and arrange them into a hand-tied bouquet using sustainable, compostable materials, guided by our in-house florist. All materials provided.

Soft-set chocolate tart with a rich custardy texture.

Our ganache is baked low and slow, then left in the oven overnight to cool gradually, creating a silky texture somewhere between a tart and a baked chocolate custard.

Made with organic chocolate from Original Beans, sourced from farmers in the Virunga rainforest and supporting gorilla conservation. The tart is finished with flaky Blackthorn sea salt.

Rootling - a celebration of Tamworth Pork.
Next Thursday, 21 May- book now

Our Tamworth pigs are ecosystem engineers, creating vital habitat for rare species like turtle doves, nightingales, and purple emperor butterflies. Living a wild, naural life, the pork they produce is totally unique and unlike anything on supermarket shelves.

This special one-night supper celebrates the very last of this season’s Knepp Tamworth pork, with the next availability not until 2028.

A carefully curated three-course menu will showcase the extraordinary flavour of these animals and the remarkable role they play in shaping the landscape around them. Bringing together a variety of cooking techniques, the menu highlights include Catalan crispy pig’s trotters with white bean stew and Market Garden herbs, slow-cooked pork shoulder, apple cider brandy sauce & Jersey Royal potatoes, and forced rhubarb turnover with Madagascar vanilla crème patisserie.

Optional drinks pairing available, featuring organic ciders and thoughtfully chosen wines.

A few recent photos from our Market Garden.

This space sits at the heart of the Wilding Kitchen & Shop, supplying organic produce grown just metres from where it’s cooked and served. The garden changes constantly through the seasons, so no two visits are ever quite the same.

Our growers are guided by regenerative principles - building healthy soil, encouraging biodiversity and growing organically alongside the wider rewilded landscape.

If you’re visiting for lunch, the Market Garden Tour is a lovely way to see where many of the ingredients on your plate begin. Led by one of our expert growers, the tour explores what’s being sown, harvested and grown throughout the season, how the garden connects to Knepp’s wider rewilding project, and the challenges and rewards of growing food sustainably in this way. BBQ nights start again this Friday and the weather forecast looks like it's on our side - sunshine, blue skies and 22° - what could be better?! ☀️

Fire cooking, estate-grown produce, cold drinks, and good music filling the courtyard.

We’re kicking things off with a special special band, , bringing Cuban Son, Salsa, Cumbia and Afro-Cuban rhythms straight to the field. Fronted by Havana-born vocalist Adriana Lord (who’s shared stages with the likes of Eliades Ochoa of Buena Vista Social Club)

Do you know the story of the Knepp Oak?

If you’ve visited us recently, you may have noticed the new oak saplings on the tables at Knepp Wilding Kitchen.

They come from a very special tree here at Knepp. An ancient oak that stands beside the castle, quietly anchoring the landscape.

In 1999, a tree expert called Ted Green came to inspect it and told us it was around 550 years old, with centuries still ahead of it. But he also warned that the oaks around it were struggling - their roots damaged by years of ploughing and chemical use from

Ted spoke about what we couldn’t see. The life underground. The mycorrhizal web of roots and fungi connecting everything, and how easily that network can be broken.

That moment changed something for us. It was the beginning of a different way of seeing the land - and ultimately, the beginning of rewilding at Knepp.

So in a way, our whole story starts with that oak tree.

These little saplings are a way of bringing that story to our guest experience. A quiet reminder of where it all began.

And when they outgrow their pots, we’ll be giving them away - sending them out into the world, in the hope they take root somewhere new and carry that story a little further. 🌱

Our fish is wild and native, caught daily by Clive, a dayboat fisher off the Sussex coast who uses targeted specific methods of fishing.

Songs in Nightingale Season
with Catherine Craig🐦🎵🎶

Saturday 9 May, 5–6.30pm

As dusk settles over Knepp, join us in the candlelit Gathering Barn for an evening of music shaped by the season. Hosted by musician and poet Catherine Craig, this is a chance to pause, listen, and gather while the landscape hums with birdsong.

Piano, guitar and voice weave through original songs and carefully chosen pieces, threaded with storytelling, humour and quiet reflection. With nightingales now calling Knepp home, this is a small ode to their fleeting, magical song – a sound that only graces us for a few short weeks each year.
Sparkling elderflower on arrival, and a chance to step outside midway to breathe in the evening air.
