It's cold, its snowy, its soup time. Super easy to make Lentil and Bacon Soup.
Makes approx. 1.2 litres
You will need:
130g bacon, diced(smoked and streaky is my favourite)
250g split red lentils
1 onion, diced
1 garlic clove, grated or finely chopped
1 tsp chipotle paste (optional)
1 tsp smoked paprika
1 stock cube/pot of choice (I use chicken)
500ml boiling water
Salt and pepper for seasoning
Place a sauce pan on a medium to high heat with a drizzle of oil, once hot add the bacon and fry for 5 min until starting to crisp. Move the pan to a medium to low heat and add the onion and soften for 5-10 mins. Add the garlic, chipotle paste and smoked paprika and cook for 1-2 mins. Add the lentils, stock pot and 500ml boiling water. Bring to the boil, cover and simmer for 15-20 minutes until lentils are tender and have absorbed most of the water. Loosen the soup with water until it is at the consistency you like, and season with salt and pepper. Now enjoy!
