Such a lovely, lovely bunch of lasses

We had a great evening at the stunning Country house, The Fitz in Cockermouth cooking & serving a 3-course dinner party for 16 girls on a Hen weekend.

It makes such a difference when everyone is genuinely so appreciative & grateful of our efforts 🩷 in making an evening special

Terrine of three cheeses
Italian cheeses; buffalo mozzarella, gorgonzola & ricotta with fresh herbs & spring onions. Served with walnut bread & damson & apple chutney

Toasted goats cheese with blackened sherry-vinegar onions

Hot casual buffet, grazing boards, finger buffets + salads

- Hot buffet consisted of lamb cobbler with pearl barley, celeriac, carrots, parsnips, leeks, herbed dumplings / Cumberland sausage wheel with wholegrain mustard mash, onion gravy & buttered peas / pickled red cabbage / cucumber, radish, mint salad with lemon vinaigrette

25 European corporate clients fully fed over 3 days!!

I've been catering for the Webster Family for a number of years now when they come on their hols to Lingholm. Always lovely to see them, last night they celebrated a 60th birthday with a formal dinner party 🥳 🎉

Well, this is what a group in Keswick are doing, they've chosen an informal 3-course meal with a mixture of 10 different dishes....

A lot to get made in 2 days but pleased with it all!

A 'Raughton Head' post wedding celebration, just up the road from where we live!

Its been nice actually to not travel so far today, Jessica & Neil asked me to provide canapes for their guest's arrival followed by a cold finger buffet. An informal, relaxed party in the family garden with good food, good b**r from Hesket Newmarket Brewery & good music!

Canapes

-Arancini with Dolcelatte & dried porcini mushrooms
-Mini Yorkshire puddings
with roast beef & horseradish cream
-Goats cheese, fig, honey & mint crostinis
with balsamic drizzle
-'Black Dub Blue', pear & walnut on rye
-Smoked salmon, chive, watercress rolls

Buffet

-Tenderstem broccoli, spring onion, thyme, Smoked red Leicester frittata with mixed seeds
-Vegetable samosas/onion bhajis with
mango chutney dip
-Bacon wrapped Cumberland sausages
- Mixed quiche selection; roasted asparagus, dill & feta / leek, oregano & cheddar / caramelised onion & goats cheese

Loving the look of today's lunch!

With a dinner party last night....a business lunch today....& a wedding on Saturday, there's a load of food being prepped & cooked in the kitchen this week!

This lunch is heading to Innovia in Wigton; one of my favourite corporate clients 😁 who give me free reign on their lunches so this is what I've made....

- Gado-gado-style potato salad with boiled eggs, vegetables, crispy onions in a spicy peanut dressing
