Everyone in our house has been a bit under the weather, so this has been on repeat. 🍅
It’s one of those meals that feels like a hug in a bowl, and the best bit?
The kids actually like it.
Which, when you’re trying to get something nourishing into a poorly child, feels like a small miracle. 😂
It’s packed with good stuff too.
Bone broth brings protein, amino acids, collagen and gelatin. The tomatoes, garlic, onions and basil add vitamin C, antioxidants and a whole load of plant goodness, with olive oil and parmesan bringing healthy fats, protein and calcium.
Nothing complicated. Just proper food, made from good ingredients, that feels comforting when everyone is feeling a bit rough.
🍅 Roasted Tomato & Bone Broth Soup
Serves 4
500ml BONE Organic Broth
1 x 400g tin tomatoes
4 cups vine tomatoes, quartered
4 garlic cloves, crushed
1 onion, diced
Small bunch fresh basil leaves, chopped
3 tbsp olive oil
Salt and pepper
1 handful grated parmesan per serving
A drizzle of double cream, optional
How to make it
Preheat the oven to 185°C and line a baking tray with baking paper.
Put the vine tomatoes on the tray with 2 of the crushed garlic cloves, 2 tbsp olive oil and a good pinch of salt and pepper. Gently combine and roast for around 45 minutes.
Meanwhile, heat the remaining olive oil in a large pan and gently brown the onion. Add the remaining garlic and cook for another minute.
Add the tinned tomatoes and BONE broth. Season to taste and simmer for around 10 minutes.
When the roasted tomatoes are ready, add them to the pan along with the fresh basil and blend until smooth.
Serve with grated parmesan and, if you fancy it, a little drizzle of double cream.
And my favourite bit? Dunking cheese on toast into it. Absolutely bloody delicious. 😋
