Who watched the GBBO last night?? 👀🍰

The Technical was one of my favourites… coffee cake! ☕️🤎

I know it was technically coffee & walnut, but I hate walnuts 😂 so I always make mine as just coffee cake!

Guess what??

These brownies took me 4 years to get perfect!!

Here’s some tips to help you get that perfect fudgey brownie 👇🏽

1. Mix your eggs and sugar until fluffy and light in colour, imagine your whisking up egg whites!

2. Use half brown sugar - this helps make the brownies soft and gives a chewier texture with a subtle caramel like taste

3. Mix in the dry ingredients by hand only until you can’t see any flour/cocoa powder - this helps reduce the chances of over mixing which can create a cakey brownie

4. Leave to cool and then place in the fridge, a minimum of 3 hours but ideally over night! This helps them set and gives you that crisp clean cut slice

How are we already nearing the end of September?! 🍂 This year is absolutely flying by!

After the most jam-packed summer, I’m more than ready to slow down (just a little!) and dive into all things autumn 🍁🤎

Autumn bakes, beautiful autumn weddings, cosy days and then… somehow it’ll be time to start thinking about Christmas! 🎄✨

Here’s to the final stretch of 2026!

Whilst I have some cakes in the oven I am sitting planning a Halloween menu which I will announce next week when it is officially October 👻🎃💀

Our unicorn bouncy castle slide combo sheltering from the wind today at The Sun Inn, Acomb!

We cant set up any of our castles with a wind speed of 24mph or over, but luckily for our unicorns, sheltered around the back of The Sun Inn and with multiple tests on our Anemometer and a highest reading of 11mph we were good to go!

Suitable for indoors too 🦄
