Not every great British dish was born in a grand kitchen.

Bubble & Squeak began as a simple way of giving yesterday’s vegetables a second chance. Potatoes. Cabbage. A hot pan. Nothing wasted.

Its curious name comes from the sounds it makes while cooking — the bubbling and the squeaking in the pan.

More than 250 years later, it’s still one of Britain’s most comforting traditional dishes.
