And to think I almost didn’t post the Suffolk Ekuru because it wasn’t quite complete! 😂
Sometimes the things we nearly don’t post are exactly what someone needs to see.
My lovely Dammy, fellow food boss aka the Premium Queen, saw my Ekuru post and the cravings kicked in asap! 😋
That post brought in an order, and Ekuru has been on repeat, travelling miles from our kitchen because comfort food is life! 👌🏾
For those wondering… what exactly is Ekuru? 👀 I g*t you!
Ekuru is a traditional Nigerian steamed savoury bean pudding made from peeled black-eyed beans “the texture of well
prepared ekuru is often likened to a light, fluffy soufflé”. Similar to moin-moin, but simpler and traditionally made plain without the usual peppers, proteins and seasoning, allowing the creamy, delicate bean flavour to shine and served with an earthy spicy sauce with added dried fish & the likes. Can also be made completely vegan /vegetarian.
