​After an incredible experience cooking alongside the legendary at the dinner last year, my culinary heart has been travelling through the vibrant flavours of Goa. ✈️

​I’m bringing that journey to the Helensburgh Food & Drink Festival this spring! On the menu: my signature Goan Chicken Curry. Think aromatic spices, coastal vibes, and a whole lot of soul.

​One minute you’re a pro, the next you’re "shaking like a washing machine" trying to remember how to make toast. It’s not about skill—it’s about the mental game.
​Here is how to survive the MasterChef kitchen:
​1️⃣ Tunnel Vision is Your Friend
​The camera isn’t there. The crew isn't there. It’s just you, the ingredients, and the heat. If you wouldn't talk to your oven, don't look at the lens. Narrow your world to your prep board.
​2️⃣ Lean on Muscle Memory
​When the pressure hits, your brain might freeze, but your hands won't. Keep your Mise en Place tighter than ever. If your station is organized, your body will take over when your mind goes blank.
​3️⃣ Talk to "The Pass," Not the "Star"
​When the judges approach, don't treat them like TV icons—treat them like the Chef de Cuisine. Answer their questions, but keep your hands moving. Never stop the work for the talk.
​4️⃣ Process Over Result
​If you’re thinking about the trophy, you’re going to shake. If you’re thinking about the sear on that protein or the balance of that sauce, you’re going to win.
​The Golden Rule: Cook your heart out and stay true to your flavors. At the end of the day, a perfectly seasoned plate is the only language that matters. 👨‍🍳✨
