There is a unique kind of magic in sharing your journey with young, eager minds.
​Recently, I had the privilege of speaking to the incoming batch of freshers at ISH / École Ducasse. Seeing the spark, commitment, and pure enthusiasm in that room was immensely gratifying.
​We kicked things off with a seminar on passion, growth, and thought processes, and I was blown away by the energy—questions were firing from every single corner of the classroom!
​We followed it up with a masterclass focused on a philosophy close to my heart:
​Look at the nature around you for inspiration.
​Keep it simple—respect the integrity of your ingredients.
​Prioritize flavor above all else.
​Technique can be learned over time, but curiosity and respect for the craft are where great journeys begin.

The iconic Mirchi Galli (Chilli Lane) in Lalbaug or the bustling lanes of Byculla! There is nothing quite like the sensory overload of a traditional Mumbai spice market—the sharp, warm air thick with the aroma of roasting chillies, and the rhythmic thud-thud of the heavy pounding machines grinding custom masala blends.
​Buying your spices this way is unmatched because you get to control the exact flavor profile, heat, and color of your home cooking.

The three varieties you mentioned are the absolute holy trinity of Maharashtrian and broader Indian cooking, each playing a completely different role:
​Bedgi (Byadgi) Chilli: You can easily spot these by their distinctively crinkled, shriveled appearance. They carry a brilliant, deep red color and a distinctively pungent, smoky flavor with a moderate, biting heat. It’s the backbone of authentic Malvani and Kolhapuri masalas.
​Kashmiri Chilli: Mild on heat but grand on appearance. These give your gravies and curries that rich, restaurant-style bright red hue without making the dish uncomfortably spicy.
​Deghi (Deggi) Mirch: Often a brilliant blend (sometimes utilizing ground Kashmiri and other colorful chillies), Deghi mirch gives you the best of both worlds—a highly vibrant orange-red color paired with a slightly higher heat kick than pure Kashmiri.
