Our signature Beef Wellington takes 24 hours to prepare, with every step crafted to perfection. We start with a 45-day dry-aged beef fillet, wrapped in delicate crĂŞpe, rich mushroom and truffle duxelles, before being encased in golden puff pastry and baked until perfectly crisp.

Designed to share and served with your choice of two sauces and two sides, it’s a true centrepiece and the dish that has become synonymous with The Merchant Steakhouse.
