Ciao a tutti"
As a dish of the day, we will talk about carbonara, a typical Italian dish, simple and tasty, from the Lazio region, which has conquered the hearts of the whole world and which has undergone various changes from its original version.
Carbonara is a dish originally from Lazio dating back to 1940, whose invention and name are still unknown. It is said that it was invented during the Second World War, when the Americans landed in Italy, initially based on eggs, bacon, pepper, parmesan and pecorino romano, and that after spreading to the rest of the world it has undergone variations.

Ciao a tutti
Welcome to italian cooking, from now on, every Monday of the week I will post 2 posts, one concerning curiosities regarding the italian cuisine, restaurants and events and another concerning cooking topics requested by You or the dish of the day.

Speaking of dish of the day, today we have LASAGNA with mushrooms.
Italian kitchen has developed through centuries of change, with recipes that extend since ancient times and have been perfected over time.
Lasagna is an old italian type of flat pasta, developed during the middle ages, in the 14th century, in the city of Naples.
At first, according to the italian cookbook, lasagna was made mainly with tomato sauce, but later on the tradition changed, changing the name too in "lasagna di Carnevale" which was introduced by the city of Naples, made of local sausage, fried meatballs, hard-boiled eggs, ricotta or mozzarella and Neapolitan ragù.
Over time new changes were made to the lasagna, based on the place where it was prepared.
Such as the most famous lasagna, produced in Emilia Romagna, known as "Lasagna al forno".
