We work closely with Tam Clark in West Calder, bringing you some of the very best local Scotch Beef & Lamb.

Once it arrives with us, the beef is dry aged to perfection right here at Gillespie’s, developing that proper flavour and tenderness. 🔥

And one of the things we’re most proud of?

📍 Just 17 miles through the whole process.

Local farmer. Local butcher. Proper quality meat. 🥩🐑
