There is something many people never truly see behind a cup of coffee served in seconds, behind a hot plate arriving at the table, or behind a smile standing on the other side of the bar.
During peak season, hospitality becomes a real physical and mental challenge. Waiters, chefs, bartenders and baristas work under a constant pressure that is often impossible to understand from the outside. While the café fills up, orders keep coming, machines never stop, and time somehow moves faster, we still try our absolute best to make every guest feel welcomed, cared for and appreciated.
The reality is that many times we work without breaks, eating in a rush or sometimes not eating at all, spending endless hours on our feet while dealing with stress, exhaustion and physical fatigue. And even then, we keep going, because behind every coffee, every plate and every service, there are people who genuinely want to do things well.
Sometimes, what hurts the most is the lack of empathy from certain customers. A moment of impatience, a harsh comment or an unfair reaction can weigh heavily when someone has already been pushing themselves beyond their limits for hours. Because no matter how professional we try to be, we are still human beings.
But it would also be unfair to speak only about the difficult side of this job.
Because in the middle of the chaos and tiredness, there are also truly wonderful customers. People who understand, who wait patiently, who smile, who leave kind words that can completely change someone’s day when there is barely any energy left. Many of them, over time, stop being just customers and become real friends. And honestly, they are often the reason why we continue doing this with passion.
Being the most visited café in Fort Augustus is something we are deeply proud of, but it also comes with enormous responsibility. Every single day we try to give the very best of ourselves, even when our bodies ask for rest and our minds are struggling to keep up with the pace.
And if there is one thing I want to say clearly, it is how proud I am of my staff. Proud of their silent effort. Proud of how they keep going even when exhausted. Proud of how they support one another during the hardest moments of service.
Hospitality can be incredibly tough, but behind this team there are amazing people. And as long as I am here, I will always stand by them, just as I always have. Because before being coworkers, we are people fighting through each day together.
Most people working in hospitality are not looking for applause or recognition. Just a little understanding. A little patience. And the reminder that behind every uniform there is a human being giving everything they have so others can enjoy a good moment.
And despite everything… tomorrow we will open the doors again with the same intention as always: to give the very best we have.
