One afternoon, I met this man on the beach at Sidi Koki in Morocco. He was a fascinating man who had travelled to Morocco from Senigal for work. How many of us would travel that far for work? No benefits for this chap.

After a chat and an exchange of views, I asked if I could take his picture, to which, to my surprise, he answered yes.

Seeing the man face to face and then seeing him through the lens was hypnotic; it was as if he knew what I wanted from him and had done this a thousand times before. He was the perfect subject, a professional.

His face portrays hardship and a battle with life, but he is happy and content with his lot; nothing phases him. I genuinely felt humble in his presence.

These are delicious, my dome cakes; what else would I call them.
The tuel and the shard I made, I am getting good at tuel.
Photographing this dish is difficult - time is against you, and the cream and chocolate melt quickly.

The organisation is the key; have everything ready; there is no time to tweak the lighting presentation.

In the end, you get to eat them.

There is not much summer left, so make the most of it with a mint fiz cocktail, it is so different to the popular Mahito. With this cocktail, give some thought to your nibbles if you are having them; too spicy will cause a real clash.

It's Sunday and time for cocktails and nibbles. The classic Mary Pickford, Collins, Tequila Sunrise and Rum Punch. The world-famous Daquery is yet to be done and photographed.
