MAIN INGREDIENTS
First, gather all your fresh ingredients. Plenty of colour, crunch and flavour going into this one! Oh and don’t forget the chicken thighs! (For bigger portions you can change the amount of chicken thighs used and adjust the chicken marinade quantity)
SAUCES AND SEASONINGS
Next, the ingredients that bring everything together—including our Korean Spice and smoked salt 🔥
Here we go!!🍒🔥
RAW CHICKEN
Start with your chicken thighs, lime, garlic, oil and a generous coating of our Korean Spice.
SEASONED CHICKEN
Massage the seasoning into the chicken, making sure every piece is completely coated. Leave it to soak up all that flavour! For the best results leave this overnight.
MAKING THE CHERRY GLAZE
Now for the star of the show: the sweet, sticky cherry glaze 🍒 mix your soy sauce, cherries, garlic, ginger, honey, rice vinegar and lime juice in a pan on a low simmer…
GLAZE READY
Sweet, tangy and with just the right amount of heat—this glaze is seriously good! For a smooth glaze you can optionally blend to get a glossy result.
PREPARING THE SLAW
For the slaw: red cabbage, spring onion, fresh herbs, oil, a touch of rice vinegar, cucumber, sesame seeds, pepper, lime, lemon and a tiny bit of that gloss cherry glaze,(save the rest for the chicken)
FINISHED SLAW
Mix everything together until it’s colourful and coated in that zesty lime and lemon juice to keep it staying fresh 🍋🟩
The perfect fresh and crunchy contrast to our sweet, sticky chicken. We elevated this using our amazing smoked salt to give it a nice kick💪
