Gluten Free Focaccia Sandwiches launch at The Dough Works tomorrow and heres how we handle, prepare and produce our new offering in the safest way possible.

Gluten Free Focaccia Sandwiches Handling

- Guest pre-orders up to 10am on the day of arrival - all gluten free orders are ready before morning dough production. Gluten-free sandwiches are only available on a pre-order basis and unfortunately won't be on general sale.

- Gluten free sandwiches are made and individually wrapped in main kitchen using clearly purple labelled utensils and chopping board to mitigate cross contamination.

- Sandwiches then stored in the fridge until service.

- During service sandwiches removed from the fridge and stored wrapped downstairs in separate bags.

- When the guest arrives the gluten free sandwiches are toasted in the same oven as the Panuozzos. The sandwiches remain wrapped during the toasting process and use separate cooking trays, so the gluten free sandwich does not touch any internal oven components.

- The gluten free sandwiches once toasted are served directly onto a plate still wrapped.

Precautions included
⁃ Separate and clearly identifiable utensils, preparation boards and oven trays
⁃ Gluten free sandwiches are prepared first, before Panuozzos are cooked in the main kitchen.

Disclaimer
While every precaution has been taken, due to the nature of our business, flour containing gluten is present in the environment due to Panuozzo dough preparation and cooking. The gluten free sandwiches, while wrapped and on separate trays, are toasted in the same oven as regular Panuozzos. In result gluten can also be found internally inside the downstairs oven.
