Yes, we have a band saw for cutting our own ice. As you do.

This is Samantha at the sharp end of our new ice programme.

After we expanded the kitchen, we were able to use the old prep area for juicing and garnishes in the day and dedicate it to ice-cutting in the evening. Because we’re at last able to make sufficient quantities of clear ice in-house – thanks to the two new Clinebell CI-4 machines we installed. They each make four 25lb blocks of perfect ice in about 24 hours or so. Then we get to work cutting the blocks into cubes of exactly 3x2x1¾”. Why that size? To fit our Taproom Old Fashioned glasses of course.

We’re still finetuning the program. But the results are worth it: the drinks definitely taste better. And that’s the whole point, right?
