A huge thank you to Solas Neon for your incredible skill and craftmanship. They are the final workshop in Scotland still bending real glass neon. Their glassbender has been behind the burner for over 30 years.

How spicy is too spicy...?

Japanese food tends to emphasise subtlety, balance, and the natural flavours of ingredients, so heavy spice often isn’t a big part of our traditional cooking.

We’ve been preparing a few new dishes to add to our bistro menu for a while now, and the time is almost upon us to share more details!

Adding to our menu is always a special occasion and something we take very seriously. Chef Nobu and Chef Kaori bring decades of top experience to our kitchen and take a lot of pride in bringing authentic Japanese cuisine to the people of Edinburgh.

Sake is as synonymous with Japanese cuisine as sushi or udon noodles, but how much do you actually know about ‘Japanese rice wine’?

Yes, we call it wine, however sake is actually brewed rather than distilled - making it closer to beer (although that’s where the similarities end).

is one of our favourite serves at the bistro, playing a part in our classic sake flight. Okuden Kanzukuri is a Masumi sake that’s mellow and mild-mannered with flavours balanced on the rice's sweetness, acidity, and the savoury aspects of sake.

We suggest pairing this with some of our delicate fish dishes, especially our tuna sashimi.
