Archipelago Artisan Bakery Archipelago Artisan Bakery is an artisan bakery and cafe. We make fresh organic bread, cakes, salads, soups every day. Open Monday to Saturday 9am-5pm.

Caroline Walsh has worked in the food industry professionally for 10 years and has cooked all her life. She has excellent knowledge of baking and artisan bread-making and has undertaken numerous bakery courses including one with local artisan baker Andrew Whitley of Bread Matters. Most recently, she has worked as head chef at the Fruitmarket Café. Prior to this she helped to set up Loudons Bakery

in Edinburgh in January 2011 and was Head Baker there for just under two years. She has also worked in Paris for the well-known Rose Bakery. She has also spent time cooking in Greece, Sweden and Norway. Much of her bread and cakes are inspired by her work and travels abroad. Caroline believes that what you put into baking is reflected in the end product and she works hard to create recipes and flavours which are just a little bit different. Caroline also has a keen interest in the ingredients she uses. At Archipelago she aims to use local produce where possible such as carrots, parsnips and beetroots in her cakes, or produce picked from the garden or from one of her many foraging trips! Blackberries are picked locally for the jam and elderflowers in June to make cordial for the cakes!

Ready for lunch?! We've got big focaccia sandwiches on the counter today with our own focaccia. Choose from Scottish Clava Brie or St Andrews Farmhouse cheddar and have it with salad on the side! Today's summery salad is Raspberry, goat cheese, nectarines, rocket, flaked almonds, sherry vinegar dressing.

I often think 'Be more Danish!' as seem to always rank highly in the art of well-being. They are one of the top scoring countries in the world for being healthy and one of those reasons is because they eat a lot of high-fibre seeded sourdough.
So why not try out multiseeded dense rye sourdough which is nutrient dense and contains 5 plants (seeds).
Our Danish Rye sourdough keeps for at least 5 days and gets better in flavour as the days go on.
