We’re looking for a senior sous chef (or strong sous) to join the team at Shuck!

Small plates, seafood, cooking over charcoal. Menu changes with the seasons and the catch. It’s a busy kitchen, especially heading into spring and summer, so we need someone solid who can step up and run service alongside the head chef.

What you’ll be doing:
– cooking with fire and fresh fish from the Sussex coast
– helping shape a regularly changing menu
– keeping standards high in a fast-paced service
– supporting and leading the team when it counts

What we’re after:
– experience in a good quality kitchen
– calm under pressure and organised
– into seasonal food and proper produce
– ideally some experience with fire or charcoal

The details:
– Wednesday to Sunday
– competitive salary
– equal share of service charge
– live-in available if needed

Good team, no nonsense, proper cooking.
