Hidden in a woodland valley just outside Helmsley, The Lazy T - A wild getaway is a wild getaway in every sense. Handcrafted off-grid cabins, solar power, timber from the family farm, and skies so dark you can actually see the stars.⁠

Their Lazy Sundaze events are something special... a long, slow Sunday lunch cooked over an open fire in the woods, served in a beautifully decorated marquee with a glass of wine in hand and plenty of space for the little ones to explore. And on the fire? Herb Fed chicken. Slow-reared birds, cooked slow, eaten slower. Exactly as Sunday should be.⁠

Even when the summer heatwave hit, the team went the extra mile working late into the evenings with extra water, extra shade, extra checks to keep the birds cool, comfortable and happy. In farming we often have to adapt and we are incredibly grateful to have such a hardworking team!

What's in your fridge? Cucumber, tomato, avocado, a good salad base and of course our oak-smoked chicken breast!⁠

One last taste of summer before autumn arrives 🤌

The brilliant Mark of Marks Kitchen and BBQ has shared his method for perfectly crispy-skinned chicken breast, served over a vegetable orzo broth made with home-made stock from a previous Herb Fed roast chicken dinner. Nothing wasted, everything delicious.

His secret? Starting the chicken skin-side down in a cold pan and weighting it with parchment, so the skin renders slowly to golden crisp before finishing in the oven.

Flat iron chicken on the BBQ. If you haven't tried it yet, it's a game-changer — a whole boneless bird that cooks evenly whether you're using the Kadai or the grill.⁠

We've done ours with a coriander chimichurri. Fresh, spicy, herbaceous. Rub half into the bird before cooking, spoon the rest over once it's done. Honestly, it's divine.⁠

The sauce works just as well with parsley if that's what you've got, but there's something about fresh coriander that feels right here. Smoky chicken, bright herbs, lime and garlic doing the heavy lifting.⁠

Another year older, still can't convince the flock to help.⁠

Sixteen years into farming, Edward's still hand-bedding birds, checking fields, drinking strong Yorkshire tea, and wondering why the birds (including his wife and daughters) won't just cooperate. Still learning. Still believing it matters.⁠

We're grateful for the farmer who genuinely cares whether his birds have a good life. And for the person who's built something worth believing in.⁠

Ten years married. Ten years farming together. Ten years of asking, "Have you tried turning it off and on again?"⁠

We've grown Herb Fed, shared the adventure with Martha and Letty, drunk enough Yorkshire Tea to float a turkey tunnel, and somehow still like each other.⁠
⁠
Turns out farming and marriage have a lot in common. Things break, plans take twice as long as expected, and some days are harder than others. But having someone in your corner makes all the difference.⁠

Not bad for a long-term merger with pretty decent returns. Here's to the next ten years - hopefully with fewer curve-balls... although we won't hold our breath 🐔🥂

A Scottish boozer with a proper kitchen, from the team behind Nauticus and Dogstar, with James Murray, a Michelin-starred chef, leading the food. Their thing?
