Late September at Legerwood Scotland where I was cooking for their guests during their stay.
A few days of crisp country air, outdoor adventures, quiet moments, and the flavours of early autumn taking centre stage.
From the Legerwood farm: beef, lamb, venison and partridge, alongside beetroot, herbs, rhubarb and apples.
From just five miles away, the organic market garden at The Plot Thickens.provided vibrant salads, herbs, beetroot and edible flowers, grown with the seasons and picked at their best.
We don’t always manage to photograph every plate as our guests come first:-
- Sirloin of Legerwood Beef w/ Port Jus
- Rump of Legerwood Lamb w/ Wild Mushrooms Parsnip Celeriac Purée
- Roast Hake, Confit Garlic Prawns, Herb Butter Sauce, Fennel Braised With Citrus, Charred Radicchio
- Fish Chowder
- Apple & Pear Toffee Crumble w/ Crème Anglaise & Vanilla Bean Ice-Cream
.. but every dish tells a story of place, season and the people who grow it.
